Pathways responsible for the biosynthesis of glycans generally consist of a wide variety of glycosyltransferase and glycosidase reactions, potentially leading to the formation of a variety of structures. The structure of a glycan that is expressed in cells depends on which pathway, among the many possibilities, is relatively dominant. Although the levels of expression of the enzymes are one of the most important determinants, other factors can also affect enzyme reactions that are involved in the control of glycan structures. This chapter reviews the enzymatic bases for such pathways, such as competition in parallel reactions and product accumulation in consecutive reactions, for controlling the assembling of glycans.
